Fleur de sels are a salty variety of citrus fruit that mainly forms as a thick, delicate crust when it evaporates from the water. Fleur de sels have been collected from saltwater since ancient days, and has traditionally been used as an antiseptic and a cleansing salt. Nowadays, it is also used to flavor and garnish foods. Its name derives from its resemblance to the medieval fleur de lis symbolizing the cross of Christ. It is considered appropriate to use for wounds and abrasions, while fleur de sel is ideal for skin and hair treatment. It has a subtle, fruity flavor which is best used with fruits like apples, grapes, plums, cherries, melons, cantaloupe and mandarin oranges.
